Cheesy Potatoes with Egg Recipe


This is one of my favorite breakfast meals to make. It has everything I love about breakfast; Potatoes, Bacon, Egg and Cheese! This meal is easy to make and filling.



I usually double the recipe to serve 2.

Ingredients:

1 Potato
1 Egg
2 garlic cloves or a few dashes of garlic powder
1 tsp of Pepper
1 tsp of Parsley
2 tsp of butter
Shredded cheese
Bacon bits (optional)

Instructions:

Chop potato and set aside. Melt butter in a skillet over med-low heat and add garlic and other spices. Add potatoes and cook until light golden brown (about 7 minutes). Make a well in the center of the potatoes and crack egg. Cover with a lid to cook egg. Once egg is cooked to your preference add cheese and cover with lid to melt cheese.


If the potatoes start over cooking before your egg or cheese is melted you can remove the pan from heat and keep the lid on. I like that my egg over easy but I suggest you cook your egg as you would like it but keep in mind that the egg will continue to cook while the cheese melts.


Adding bacon is optional but why wouldn't you?
