Ingredients:
- 1 pound of boneless skinless chopped chicken
- 7 cups of water
- 1 Tbs of Chicken Bouillon
- 1 can of diced tomatoes
- 1 can of corn
- 1 can of black beans (low sodium)
- 1/4 or 1/2 an onion (chopped)
- 1 Tsp of Pepper
- 1/2 Tbs of chopped garlic of garlic powder
- 4 teaspoons of Chili Powder
- 1/2 Tbs of Paprika
- 1/2 Tbs of Celery Salt
- Tortilla chips or strips of tortillas
- Shredded Mozzarella Cheese (optional)
- Cilantro (optional)
- Sliced Avocado (optional)
Instructions:
Add all ingredients except tortilla chips, Cilantro, Cheese and Avocado into a pot and bring to a boil. Continue cooking over a low-medium heat for an hour.Top with cheese, cilantro, avocado and tortilla chips.
