Making soup on chilly fall and winter days is a family tradition of ours and with the holiday's this season, a traditional family soup recipe can easily come to be a family holiday recipe. Albondigas is a Mexican soup that has been a traditional family recipe for many decades. Now is the time to celebrate the holiday season with family and friends, make it memorable with a delicious family recipe.

Albondigas Recipe
Ingredients:
- 1 lb. - Ground beef
- 1/2 cup - Rice
- 1 - Eggs
- 2 - Garlic cloves, minced
- 1 tablespoon - Soybean oil
- 2 teaspoons - Oregano
- 1/2 - Onion, diced
- 1 - Green Pepper, diced
- 2 - Potatoes, peeled and chopped
- 2 - Carrots, chopped
- 8 oz. - Tomato sauce
- 8 cups - Water
- 2 tablespoons - beef bouillon
- Pepper, for flavor
Directions:
- Prepare the meatballs first. In a bowl, mix together - Ground beef, rice, eggs, and 1 teaspoon of Oregano. Form meatballs into small balls using your palms.
- In a large pot - add Soybean Oil and garlic, simmer for about 3 minutes over high heat.
- Add remaining ingredients and meatballs to the pot. Bring ingredients to a boil then reduce heat to a simmer for 35 minutes.
- Add pepper and salt for taste
